  • 1 cup blanched almond flour
  • 1/8 cup unsweetened cocoa
  • 2 teaspoons maca powder
  • 1/8 teaspoon baking soda
  • pinch of salt
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut oil, melted
  • 1/2 cup full fat coconut milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • Optional: Chocolate Chips (I used enjoylife choclate chips because they're dairy free)

  1. Preheat your oven to 350°F and grease a donut pan.

  2. In a bowl, combine dry ingredients; almond flour, unsweetened cocoa, maca powder, baking soda and salt.

  3. In a separate bowl, whisk wet ingredients; maple syrup, coconut oil, coconut milk, egg and vanilla extract.

  4. Add dry ingredients to wet ingredients, using a spatula until well mixed (careful not to over mix).
  5. Carefully pour batter into donut pan. Shake pan a little to even batter. If desired, drop about 5-6 chocolate chips into donuts.

  6. Bake until a toothpick inserted into the center of the donut comes out clear, about 15 minutes. Let donuts cool on wire rack before removing from the molds.
